This book is the best one I have found about dehydrating, it manages to take you through the process step by step. It starts with why dehydrate, what to dehydrate and then how to. It includes trip recipe planning and a one week menu, although there are a few uniquely American ingredients, but not many. There are also 2 sets of plans to make a dehydrator, although the Solar Dryer may not be too effective over here, the other one is quite good if you are that way inclined.
